Voliba – 2013
Our signature wine, a light and fruity red wine produced entirely from the Rondo grape grown from our own Summermoor Vineyard.
The wine expresses ripe strawberry notes on the nose, it is ruby red in colour and has red fruit flavours and savoury game notes to finish. This wine is regularly described as being typically ‘Pinot Noir styled’ and as a result is very versatile, pairing well with a range of dishes such as light game dishes, a variety of vegetarian dishes as well as being equally as enjoyable simply on it’s own.
This wine was first crushed and destemmed, then cool fermented on the skins for just five days in order to retain the fresh fruit flavours from the fruit. The juice was then pressed off of the skins and fermentation was completed in stainless steel tanks. Once the initial alcohol fermentation was completed, a malolactic fermentation was induced to ensure a soft and rounded feel. Finally, the wine had a small addition of some reserved un-fermented grape juice to ensure a perfectly balanced, fruit driven wine.
The wine is best served at room temperature with food or even very slightly chilled if to be enjoyed on it’s own!
Voliba – 2014
Our second vintage of our signature wine, this time a more medium bodied fruity red wine produced entirely from the Rondo grape grown from our own Summermoor Vineyard.
The wine expresses rich berry notes on the nose, it is deeply coloured and shows flavours of blackcurrant, blackberry, cherry and damson with a subtle spicy oak background rounded off with an earthy finish. The wine is comparably more medium bodied than the previous vintage, but still has an unmistakable Rondo style – which with the winemaking style implemented has strong similarities to Pinot Noir or Zinfandel. The wine pairs extremely well with red meat dishes, along with blue cheese but is equally as enjoyable on its own.
The grapes for this wine were hand picked, followed by crushing and destemming. We induced a fairly cool fermentation with the maximum temperature reaching twenty-two degrees, in order to retain a fruit forward character. The maceration lasted six days resulting in a deeper coloured wine than the previous vintage. We then pressed off the wine from the skins and completed the fermentation in stainless steel tanks, followed by an induced malolactic fermentation. The wine was then aged in stainless steel for six months and partially aged in oak barriques for a further six months before ‘assemblage’ back into stainless steel tanks. The wine then received gentle fining with albumin to soften and smooth out any lingering astringent tannins; resulting in a smooth fruit driven wine with complex length.
The wine is best served at room temperature with or without food.
Masona – 2014 (Sold Out)
This is our elegant dry white wine, a rich and floral white wine produced entirely from Madeleine Angevine grapes grown at our own Summermoor Vineyard.
The wine shows floral notes on the nose, it is a very pale gold in colour and has fruity body with a mineral finish. This wine has been compared with famous northern European wines, such as white burgundy. The wine pairs well with a range of dishes such as poultry and white meat dishes or a variety of vegetarian dishes especially pan fried asparagus alternatively it is just as good on it’s own.
This wine was first crushed and destemmed, the fruit was then gently pressed in a traditional basket press and fermentation was carried out in stainless steel tanks. Once the initial alcohol fermentation was completed, the wine was aged for an extended period of ten weeks on the lees to give added complexity and minerality to the wine. Finally, the wine was lightly filtered prior to bottling.
The wine is best served lightly chilled with food and equally so if the wine is to be enjoyed on it’s own.
Verteuia – 2014 (Sold Out – New Vintage coming soon)
This is our perfectly pink wine, dry and refreshing with a fruity body to carry it, the wine is produced from a blend of Chardonnay and Rondo grapes.
The wine expresses traditional English red berries on the nose, it is pale pink in colour and has crisp pomegranate and redcurrant flavours. This wine is produced to be completely dry with a zip of acidity, resulting in a refreshing finish similar in style to a Provence rosé. Perfectly paired with Devonshire seafood, salads or barbecues or alternatively this wine will make the ideal aperitif when served on it’s own.
This wine was first crushed and destemmed, followed by gently pressing the fruit and careful blending to create the perfect pale pink juice. We then induced an alcohol fermentation and completed this to create a fully dry wine. The wine was then lightly filtered to retain full flavour, yet rendering the wine brilliantly clear.
The wine is best served lightly chilled both on it’s own or with food.
